  1. Combine Ingredients: To start, get a large bowl. Add the peeled and sliced cucumbers, sliced onion (separated into rings), and tomatoes cut into wedges.
  2. Add Dressing Ingredients: Pour in the 1/2 cup vinegar, 1/4 cup sugar, 1 cup water, 2 teaspoons salt, 1 teaspoon fresh coarse ground black pepper, and 1/4 cup oil. If using, add the 1 teaspoon of chopped fresh mint.
  3. Toss & Marinate: Toss all ingredients well to thoroughly mix and coat the vegetables with the dressing.
  4. Chill: Cover the bowl and refrigerate for no less than 120 minutes (2 hours) before serving. This allows the flavors to meld and the vegetables to absorb the delicious marinade.

Enjoy this crisp and tangy Marinated Cucumbers, Onions, and Tomatoes!
